Madchina Karam was traditionally prepared over wood-fired stoves in rural Andhra and Telangana, giving it its signature smoky flavor. This method has been preserved to retain its unique taste.

Believe it or not, I didn’t realize that Madchina Karam and Nalla Karam were the same thing until I turned 30! It’s funny how the simplest things can surprise us. This flavorful, smoky spice blend is now one of my favorites to prepare and share, connecting me to its rustic roots and unique charm.
